This is where we will be posting a few recipies each week! If you have a favorite dish and want
This week I have chosen to feature Cheesecake Brownies, Pumpkin Bread,
Shrimp Dip and Creamy Potato Sticks.
Cheese Cake Brownies

1 20 1/2 oz. pkg. brownie mix
(do not use mixes that include a pouch of chocolate syrup)
1 8 oz. pkg. cream cheese (softened)
1/3 cup sugar
1 egg
1/2 tsp. vanilla
Beat cream cheese, add sugar and blend.
Add egg and vanilla, mix until blended.
Prepare brownie mix as directed on package.
Pour cream cheese mixture over brownie mix in the pan and
cut through the batter for a marble effect.
Bake at 350º for 35-40 minuttes.
Cool and cut into squares.
Makes 24
Pumpkin Bread

2/3 cup shortening
2 & 2/3 cups sugar
4 eggs
1 can (1lb.) pumpkin
2/3 cup water
3 & 1/2 cups water
2/3 cup raisins
2 tsp. baking soda
1 & 1/2 tsp. salt
1/2 tsp. baking powder
1 tsp. cinnamon
1 tsp. cloves
2/3 cups chopped nuts
Cream shortning and sugar thoroughly.
Add eggs, pumpkin and water.
Blend in dry incrediends except nuts and raisins.
Stir in nuts and raisins.
Grease 2 loaf pans 9 X 5 X 3.
Bake at 350º for 65-75 minutes, of until wooden pick
inserted in center comes out clean.
Shrimp Dip

1 6 1/2 or 7 oz. can shrimp (drained)
1 tsp. fine chopped onion
1 tsp. lemon juice
1 8 oz. pkg. cream cheese (soften)
1 tsp. Mustard
Salt & Pepper to taste
Cream soften cheese and shrimp.
Add other ingredients and mix well
Refrigerate about 1/2 hour then put in serving dish and form into a ball.
Place in refrigerator and let set for 2 hours or even over night.
Creamy Potato Sticks

1/4 cup flour
1 1/2 cup milk
1/2 lb. American cheese cubed
5-6 large baking potatoes peeled
1 cup chopped onion
Paprika
1/2 tsp. salt
1 can cream celery soup
In saucepan, combine flour and salt, gradually whisk in milk until smooth.
Bring to boil, cook and stir for 2 minutes.
Remove from heat, whisk in soup and cheese until smooth.
Set aside. Cut potatoes into 4 X 1/2 inch sticks, place in greased 13 X 9
baking dish. Sprinkle with onion. Top with cheese sauce. Bake uncovered
at 350º for 55-60 minutes or until potatoes are tender. Sprinkle with paprika.
